Market Class – € 165
Le Pistou offers this class on Wednesdays only as the larger Saturday markets are too busy and merchants don’t have time to talk, explain or do tastings. The Wednesday market is also the market where only local producers sell their just-harvested produce and artisanal products. Because markets get very crowed after 10am in summer, we start at 9am. We meet outside Restaurant Terroirs on the Place aux Herbes.
After filling our baskets we walk the 5 minutes back to the school where we’ll transform our just-picked asparagus, baby artichokes, young purple garlic, sparkling fresh fish or shiny aubergines and sun-ripened tomatoes into luscious dishes. On the way we might also pick up some bright yellow courgette flowers (which open their petals just long enough to be stuffed by you) or perfectly matured goats’ cheeses and a crispy baguette and we ready to prepare a feast.
We chop, peel, whisk and taste. To keep ourselves focused we may need some help (a glass of bubbly usually does the trick) where we’re chatting and sharing tales of wisdom while we cook. The menu depends entirely on what we’ve bought in the market but will include a starter, a maincourse, at least one accompaniment as well as a dessert.
